The Rhubarb Sophie

Tena made this one. We had just lost Sophie and she was looking for a fitting cocktail.  It even required a trip to a specialty “mixology” store. Yes, we have one in Salt Lake City, Cottonwood Heights actually.

 4-6 Cucumber slices plus 2 for garnish

Ice

4 shots Vodka

2 oz Agave Nectar

1 Lime, Juiced

4 Dashes Rhubarb bitters

 Muddle cucumber in a shaker.  Add Ice and all the remaining ingredients.  Pour over ice filled glasses and garnish with a slice of cucumber.  Don’t drink it to fast!
