I love Mojito’s. It gives me a thrill whenever I end up somewhere Ernst Hemmingway has been. They haven’t been many, but they are all remote and spectacular. Anyway, mojitos as are pain to make, but man, on a hot day, nothing is more refreshing!
½ Mango
10-14 Mint Leaves
Ice
4 shots Parrot Bay Key Lime Rum
2 oz simple syrup
1 Lime
Splash of Club Soda
Muddle the Mango and Mint in a shaker. Add ice, rum, simple syrup and lime. Shake well and pour into a glass filled with ice. Add club soda. The perfect drink for a hot day, on a deck, preferably on a hot humid island overlooking the ocean. Just don’t drive home, communist countries don’t have very nice jails…
