Coconut Haven

This is a recipe I completely changed in response to what Tena wanted and what we had on hand!  It was good.

Ice

4 shots Coconut Rum

4 oz Pineapple Juice

1 oz simple syrup

Juice from one lime

Mint leaf torn for garnish

Place ice in a shaker, add rum, pineapple juice, simple syrup and lime juice.  Shake, pour into a stemmed glass and tear a mint leaf and float on top.  This was really, really good.  Do It!
